I am from Bacolod. Whenever people from Manila discover that I am from Bacolod they automatically assume that my favorite food is Chicken Inasal.
This is quite true.. I love chicken inasal… BUT on principle, I will NOT eat at the BACOLOD chicken inasal restaurant. It’s just not the “real” thing.
It just feels WEIRD for me to go into a nice restaurant with spotless table cloths and waiters and garlic rice along with pitchers of bottomless iced teas. It just doesn’t work for me. Real Chicken inasal is FOOD for the masses! It’s the pulutan of the working class, a barkada food, and a spiritual experience in itself!
To eat it in an airconditioned fancy restaurant is just…… missing out on the whole “street food” experience.
Here is a real authentic Chicken Inasal restaurant: Pictures were taken from the Panaad of Negros Occidental at the Binalbagan food booth.

1. Note the lack of airconditioning and proper walls. Note the open air charcoal grill…… Note the blatant disregard for sanitary regulations. This is inasal in its most primal form. Stacks of raw chicken and barbeque sticks..
2. Note the friendly manangs as they take your order. But don’t let their homely appearance fool you. These manangs really know their chicken. Note the mangaasal in the back. This is pratically the holy trinity of a chicken inasal restaurant! You shout your order to the manang who shouts your order to the mangaasal. That’s all there is to it. To waiters with notepads, neckties, Wala. If you want to get fed in a real chicken inasal restaurant, you’d better speak up.
Plus, if you’re pogi or cute/mabait to these manangs, they will pick out a really big piece for you. Yehey!

Okay so your order’s arrived. Look at the picture. Notice something different? That’s right.. The chicken and the oysters.
1.) It is a common misconception that chicken inasal is just chicken roasted over a charcoal fire. WRONG!! Chicken inasal has to HAVE a basting SAUCE!!! It may be as simple as TOYO and kalamansi or as eleborate as banana ketchup with peppers and cinnamon (I’m not kidding).
2.) Notice that there are NO Bananna leaf plates. Why are so many people so obsessed with these? A real Bacoleno in real life almost NEVER eats on a bananna leaf plate. We love our bananna trees.. Why eat on a bananna leaf or on fine china when a melamine plate will do?
3.) There must be beer. It ain’t chicken inasal with lots of beer.
4.) There must be some form of seafood to eat along with the chicken inasal. Manokan country (the famous street of chicken inasal restaurants) is beside the sea. Seafood is a traditional choice for an appetizer. To eat JUST chicken inasal won’t fill you up. It’s just not right…. you gotta have your shellfish, your beer and a big heaping plate of rice…

I have a bone to pick against the restaurant Bacolod Chicken inasal. I wrote something on this blog about how I didn’t like their chicken and I was harassed by one of their employees/managers. Absolutely right on the money! I am a true-blue ilonggo who grew up eating the real inasal. Long before Chicken House and Manokan Country became institutions in Bacolod , my family enjoyed inasal from the “manog-asal’s” who frequent the local bulangan (cockpit) in the town where my grandparents farm is located.
This was in the early 70’s.
OMG I can almost taste it, made my mouth water…. I am pregnant right now and craving, and my husband hates you because I sent him off to buy me Inasal.. (unfortunately for us, the fancy-resto type, because I don’t know any authentic Inasal place around Mandaluyong…. bummer!) I hope before I die I can get the chance to sample the seafood+Inasal combo right in Bacolod.. thanks for posting this!

Bacolod Chicken Inasal is the closest authentic Inasal na
manok that we could ever get. I mean it’s right on the budget and you’d say na, they’re not only after the profit of their resto, but as well as for the welfare of the masses… Every time you dine in there, you’d feel that your hard-earned money is worth it talaga… plus the people there are really friendly, so it’s really hard to resist not to eat there whenever you see one of their branches around.. infact i always carry a checklist of their branches, para i could drop by if im anywhere near. here’s my list, for those who wanna try din

Hello Martin! I like your site. I visited the Philippines for the first time last year and stay most of the time in Bacolod. The very first meal there was lunch at the Sugarland. The food was very good and included a variation of Chicken Inasal wrapped around a piece of sugar cane. My favorite meals were home-cooked like the Bistek cooked by my future Father-in-law.
I will be back in a few weeks and hope to try some more authentic Chicken Inasal and some home-cooked Sinigang Na Baboy.

the founder of chicken inasal recipe… THE VELEZ CLAN. My mom, ELIZA VELEZ GARRUCHO opened the 1st BACOLOD CHICKEN INASAL in San sebastian st. Bacolod city in the late 70’s which was later sold to the CAJILI Family where they did a great job in managing and branching it out in Bacolod and Manila. NENA’s in Bacolod is owned by my late aunt (my mom’s sister) NENA VELEZ. They both originally came from manokan country.
I grew up on chicken inasal having to bring it in my lunch box to school everyday. FRIED CHICKEN INASAL nga lang cuz it was the fastest way my mom could prepare it in the morning. She trained us how to make the inasal mix on a daily basis and serve at our restaurant.
The Original recipe came from my grandma and still remains with my family today. Open ako restaurant soon in Manila, kain kayo dun ha? hehehe

that is true guys masarap talaga yung manok sa bacolod. i can attest to that kasi tubong bacolod ako… i remember before lagi kami dinadala ng mom ko sa chicken house malapit sa ramos o sa crossroads. o kaya sa chicken deli naman lapit sa 27th avenue. hayyy miss ko na guid ang bacolod… basi makapuli ko sa maskara tani… miss ko na mga classmates ko sa huaming, san agustin, kag sa la salle. if ever makauwi ako djan puntahan ko lahat ng masasarap na kainan jan. bob’s, quan, chicken house, chicken deli, acasia grill, reclamation area where a lot of chiken inasal stalls, pala-pala, bar 21st, inaka, lourdes C and a lot more…. forgot to mention lcc bar-b-q… kahit sa talisay na lang malapit sa tindahan…

with regards to your stalker posting#24. i know those guys nga tag-iya sg BCI. they’re a bro & sisters partnerships kay guin hatag na sa ila sg parents nila ang negosyo. their mom is a former govt employee sa bacolod and the dad is a businessman, dealing in farm implements back then in bacolod, kaso lang, nag decline ang sugar industry. it’s good nag diversify sila sg business, that’s what came out, the BCI. pinaka una nila nga outlet dira sa shaw blvd, sa crossing…nag tin-ad and the rest is history… di ba JR?
pero, kami naga kaon man dira sa ila outlets, some of their employees are my good friends and in fairness, ang ila chicken inasal is just chicken nga guin inasal…you know what i mean. there’s no chicken inasal as the best chicken inasal way back sg naga umpisa pa lang ang manokan sa kilid sg state theater sa may plaza…right bacolodnons?
that was the 70’s…he! he! frequent hang-out namon ni misis-to-be ko…those were the days, but we when we reminisce those days…hmmm! namit guid! after the movies, kaon dayon sa kilid state, he! he!
hey martin! i read some of your blog entries and they really are pretty interesting. i will just comment in this post because i think i have something to share though not really that much.
I grow up in Bacolod and yeah, I know what you mean by the real “inasal na manok experience”. I live very near to this inasal na manokan stalls in front of Tay Tung High School and tasted their version of inasal which is really ok. I used to frequent Manokan Country when I was a kid and that’s what we really call real inasal, right? Of course, there are people who want a more classy atmosphere and I suggest that Chicken House and Chicken Deli is a good place to go (if you are in Bacoldo City). I only had the chance to taste Bacolod Chicken Inasal’s version when my parents’ CFC had an outing. The couple who owned BCI are my parents’ cellmates in CFC. Their version is honestly different from the usual inasal na manok in Bacolod. But, it is actually delicious. Maybe, it is almost close to the usual inasala na manok. BCI also serves the most delicious “pangat” I can ever taste.

now this is making me hungry. 3 months now since ive had my last chicken inasal. every week, we usually go around the city and enjoy the flavorful delights of the chicken inasal. i think the original recipe really came from iloilo. however, it was the bacolodnons who were able to enhance its flavor.

I was raised and born in bacolod. I agree with you all that Chicken Inasal really taste good. If you want to visit Bacolod Try the Savory Restaurant it was located at Narra Hillado Shopping. U will eat the best chicken Inasal with the best sauce with it. I cant forget i ate there the chicken really taste good and i’ve been there many times already. just try it and you say their Chicken Inasal is better from Manokan House.
The last time I had chicken Inasal was 14 years ago when we had a company convention in Bacolod City. We went to that place called Manukan country and it really taste so good but we all reak of chicked bbq smell after leaving
I will try to cook chicken inasal one of these days but since it’s winter time already here in the states (it’s freaking cold and raining) I will cook it by searing the chicken pieces in the grill pan then bake it in the oven @ 400 deg for 40 minutes while basting it several times. Has anyone tried this cooking method before? I hope it turns out well since I’m tired of the plain baked chicken.

Its really different from BCI when I tried it a couple of times in Manila, but to be fair with it the taste is good. My friends in Manila would always ask me what’s the difference between the chicken from bacolod and here? well my answer is simple, Its authenticity.. Bacolod is Bacolod and it will stay here. i love your bacolod hunters blog martin. looking forward to more reviews. i had a great time tracing the eating places and the food that you reviewed. you’re right about many things – city lunch’s siopao, the kikiam in that old chinese resto in shopping, etc.
now, this bruhaha about “the” authentic chicken inasal sang bacolod, where to best have it and how – i like eating chicken inasal the way you describe it. but at the end of the day, its all a matter of preference, i think.
sorry to say though that viinkidoo’s claim that the chicken inasal recipe was “founded” by the velez family is a bit too much (of a claim). they may have opened the first chicken inasal resto in bacolod in the late 70’s. but chicken inasal has been a street food or cooked in private kitchens in negros occidental and iloilo for as long as i, my mom and my lola can remember ( in the 60s, the 50s even. basta years and years and years before the velez’s bacolod chicken house and manukan country). there are a number of slight variations but the basic ingredients of langaw-tuba or kalamunding, garlic, salt (and pepper sometimes) to marinade the chicken in and achuete to baste it with, remain.
all said, i’m pretty pleased that bacolod manok nga inasal has evolved into something that we ilonggos can be hugely proud of.
so then, can someone tell me where and how crablets and adobo flakes – two other yummyness that i crave alongside kadyos with ubad, langka and baboy lido-lido – came about?

I myself is a true blooded Ilongga guid ya….! My fave food ever is inasal.
Aside from eating in all the restaurants here in Manila that serves yummy inasal….my hubby (a Fil-Chi na inasal convert narin because of me)…wants me to make them sa house. Ay ambut da ya ah!!! Sana ma bakal nalang…kasi basi di namit ang version ko…hahahaha!
Anyways, for me the best inasal is Chicken House and Chicken Deli…and ofcourse sa Manokan Country. But I had a bad experience in Manokan eh….way back 20 years ago…when we ate there…may nag away na group and they used ice pick pang saksak….kaya from then on…never nako nag tapak didto. The new restos naman I am not familiar with…..kay diri nako sa Manila for 16 years eh.
But I definitely miss Bacolod and all its yummy foods!!! Bob’s, Quan, etc etc!!!! I miss the fresh lumpia at Pendy’s too!!! Yan pinaglihian ko with my first baby!!!! Saraaaap sobra!

just came across your website…. i read each and every comment on this page… and i share the same sentiment… i miss home —— “Bacolod”…. i miss the simplicity of it… and i miss the INASAL that we have there….. it is really different from what they have here in Manila…. iba talaga ang lasa… homesick tuloy ako lalo.. buti na lang pauwi na rin ako this month para magbakasyon… pwede ng kumain ulit sa manokan country at chicken houses dun…
nice to know that we can share bacolod’s secret sa paggawa ng chicken inasal to those na hindi pa nakakapunta talaga ng Bacolod para at least they can try to cook it sa kanila.. ika nga ng iba, it’s the closest they can have if they can’t go to Bacolod….

i miss the sights sounds smells and tastes of Manokan country. Garlic rice and chicken oil… kinilaw nga tangigue kag talaba…!!!! Isa na ako katuig ka palangdamgo sang aton food daaa!!!
I am from Bacolod also that reside now in Virginia, USA. I t’s nothing wrong if we will eat our Inasal and rice in banana leaves as long as it is clean. For me it is unique and I shall say we have our own unique style. American people will love it. I would rather enjoy eating in banana leaves at Bacolod chiken Inasal than eating here in Red Lobster, Texas steakhouse, Outback etc. I really missed the chicken Inasal. Good Luck! Bacolod. I am 35, my mom is 65, and my grandmother Sabel, if she was still alive would be way older. It was their clan who started it here in Bacolod. You can trace them back from Pakyad Iloilo. There wasnt any inasal like it was in Iloilo as they started it here in Bacolod when they migrated here. That is why there wasn’t any inasal in Iloilo. There was Nena’s at the motorcycle club in Iloilo.

another best way to eat inasal for those chic liver lover is i mix ang atay sa rice den make halo the chicken oil, toyo a little salt tpos order ka paa.. yum!! missing that already esp pag lolo ko ang ga hungit sakon kg lola ko.. hay…
